This delicious and simple superfood recipe is the perfect accompaniment to your favourite dish.
Rather than boiling broccoli, I strongly recommend having a go at grilling or frying. This will not only allow you to add a range of other ingredients easily, but the stems will also hold on to more of their crunchiness.
Never chop off the stalks, no matter what kind of broccoli you are preparing. They are just as tasty and nutritional as the fluffy florets on top. Simply toss the whole broccoli into a griddle pan with a generous splash of oil.
Ingredients:
Olive oil
Tender Stem Broccoli
1 Fresh Chilli (add more if you like things extra hot!)
2 Cloves of Garlic
A sprinkle of Sesame Seeds
Method:
Toss the broccoli in the griddle pan making sure it is evenly coated in oil and allow it to soften. I like to let the florets tinge with brown just a touch, so they are crispy. Then add thinly sliced garlic and chilli and allow them to sweat and soften over the stems. Finally sprinkle over the sesame seeds.
When the broccoli florets have been lightly charred and the the pieces of garlic have lightly browned remove from the griddle pan.
This dish is great as a contorno with pasta or risotto but you can also chop the broccoli up into bite size pieces and stir into cous cous to make a delicious light snack.
