Spiced Honey Carrots

Your carrots will love you!

Cumin is packed full of iron, key to strengthening your immune system and instrumental in keeping the digestive system fit and heathy. This lovely seed is crunchy, nutty and hot and a perfect partner for the carrots.

Ingredients:

2 Carrots

2 Tsp of Cumin

1/2 Tsp of Chilli Flakes

1 Tbsp of Honey

1 Tbsp of Olive Oil

1 Clove of Garlic

Seasoning of Sea Salt and Black Pepper

Method:

Scatter the cumin seeds on a medium hot non stick pan and allow them to brown ever so slightly, releasing their lovely nutty, spicy scent. Keep an eye on them as they will toast very quickly.

Then add a splash of oil and the carrots, cut into little chip shapes.

Fry them steadily for about ten minutes with crushed garlic, chilli flakes and a dollop of honey.

Season just a little with salt and pepper and serve straight away.
