Piping Hot Celeriac Soup

Ingredients:

1 Celeriac

Small Knob of Butter

2 Tbsps of Olive Oil

2 Shallots

3-4 Sprigs for Fresh Thyme

Handful of Pine Nuts

2 Tsps of Cracked Black Pepper

Dash of Sea Salt

1/2 Tsp of Cumin

1/2 Tsp of Dried Chilli

2 Tsp of Dried Sage

250ml of Single Cream

2 Litres of Vegetable or Chicken Stock

In a large pot or pan, add the butter, onions, chopped celeriac, thyme, pine nuts, cumin, chilli, sage, black pepper and sea salt and cook for about 10 minutes on a low heat, making sure all of the vegetables are soft and cooked through.

Next pour in the stock slowly and mix well. Keeping the heat on low, continue to cook the ingredients for about twenty to twenty five minutes.

Next, pour carefully into a large blender along with the single cream and more seasoning if necessary. Whiz it all together until it becomes smooth, light and creamy.

Serve hot and smoking with a splash of olive oil, a few pine nuts and sprig of rosemary on top.
