Spiced Nut Slaw

Kicking off Toast's salad season is a fresh, crunchy slaw.

Ingredients:

1/4 Raw Celeriac

2 Raw Peeled Carrots

Handful of Unsalted Peanuts

Juice of Half of Lemon

Tbsp of Olive Oil

Tbsp of White Wine Vinegar

1 Clove of Garlic

Pinch of Cumin

Pinch of Nutmeg

Pinch of Dried Chilli

Pinch of Dried Coriander

Pinch of Ginger

Seasoning of Cracked Black Pepper and Salt

Tsp of Mayonnaise (optional)

Method:

Toss the peanuts in a hot pan until they begin to brown slightly and give off a natural sweet scent. Then add the oil, sliced garlic, vinegar and spices. Let all the ingredients infuse for about two minutes. After a quick cook, remove from the heat and set aside.

Next grate the celeriac and carrot finely into a bowl and add lemon, seasoning of salt and pepper and mayonnaise, if you wish.

Add the spiced nut mixture to the root vegetables and stir thoroughly.

You can serve this salad cold or warm it up a little on the stove.
