Charred Brussels Sprouts with Crispy Bacon

I add bacon lardons to lots of my vegetable dishes because it adds such a lush extra layer of flavour. Fried bacon creates such a great sweet and smokey taste and when crispy, an added texture to really liven the veg up. They will also give off plenty of juice and a deliciously flavoured saltiness, so all together, they make for a super hearty meal!

Ingredients:

5-10 Brussels Sprouts, halved

Half a Pack of Bacon Lardons

Small Knob of Butter

Sea Salt

Cracked Black Pepper

Method:

After halving the sprouts, put them all into a pan of water with a pinch of salt and bring them to the boil.

As they bubble away and soften, fry the lardons on a medium heat, so they become juicy and crispy.

When the sprouts are ready, drain them thoroughly and add to the bacon with butter and seasoning and any herbs that take your fancy. Rosemary or thyme are really good choices. Let them brown nicely on each side, to release their amazing flavour.

Serve straight away with your favourite meat or some crusty bread.

It's a very simple recipe but it will transform your sprouts completely!
